What's for dinner?

Here is my menu for this week:

Monday:      Ranch Parmesan Chicken, corn and rice

Tuesday:      Roast with potatoes, carrots, onions

Wednesday:  Chicken and wild rice

Thursday:     Tater Tot casserole, Normandy veggies

Friday:         Sweet and Sour Chicken and rice

Saturday:      Tortellini and salad

I am happy to say that I am back on the coupon bandwagon! I went shopping last night and my original bill was $110.40 and I paid $69.45 plus I got a $5 gift card back! Not super, but for a family of 6 I am happy!

Ranch Parmesan CHicken:

Ingredients: 
*6 boneless, skinless chicken breasts
*1 cup dry breadcrumbs
*1/4- 1/3 cup Parmesan cheese
*1 t. season salt
*1/2 -1 t. ground black pepper
*1/2-1 t. garlic powder
*1 cup ranch dressing

Directions:
1. In a ziploc, marinade chicken in ranch for at least 30 minutes
2. Pre-heat oven to 400 degrees
3. Lightly grease a 13 x 9 pan
4. Mix (in a bowl) breadcrumbs with Parmesan, seasoned salt, black pepper, and garlic powder
5.Remove chicken from marinade
6. Coat in the breadcrumb mixture
7. Place in a single layer in pan
8. If desired you can sprinkle black pepper on chicken
9. Bake uncovered for about 30-35 minutes



Tater Tot Casserole:

*1 can cream of mushroom
* 1 bag of tater tots
*shredded cheese
*1 lb. ground beef

Directions:

1.Brown meat. Add cream of mushroom and stir continuously
2. Let simmer on low for 15 min.
3. Place mixture in bottom of pan
4. Lay tater tots on top
5. Place in oven at 350 degrees and let brown.
6. Sprinkle with cheese and let melt in oven

** We usually double this when the big kids are here**

Chicken and Wild Rice

**THIS ONE TAKES A LONG TIME IN THE OVEN**

Ingredients:
*2 cups long grain rice (we use the Uncle Ben's Original Long grain in the box)
* 1/4 c. diced white onions
*small jar of mushrooms
*small amount of celery
*optional: green bell peppers*
*1 can cream of mushroom soup
*1/3 can of water
*1 can beef consume
*6 chicken breasts

Directions:

1. Saute: onion, bell pepper, mushrooms and celery in butter
2. In a bowl, mix the soups and water together
3. Line 9 x 12 baking dish with rice
4. Cover with saute mix, followed by soup mix
5. Lay chicken on top- add salt and pepper to each and a slab of butter (yummy calories)
6. COVER and bake 1 1/2 hours at 350.
7. LAST 15-30 min. uncover and let brown

    And personally, I think paying less than $100 for groceries is awesome! I need to jump on that coupon wagon!
