Yummy in my tummy!



I love a new recipe! I found this recipe on Pinterest  and decided to try it! WINNER here at the Mikkelson casa. 

So simple, so cheap, so yummy. All my favorite "so's"

Here's what ya need:

* 4-6 boneless, skinless chicken breasts (thawed)
* One packet of DRY Italian Seasoning Mix
* Green beans (I used two cans)
* Red potatoes,  quatered
* Stick of butter

Directions:

Pre-heat the oven to 350*
Place chicken on the bottom of a 9 x 13 pan
Pour green beans on one side, the potatoes on the other
Sprinkle Dressing Mix all over
Pour one stick of MELTED butter on top
Cover with foil and bake for ONE HOUR!

Orange Julius Baby!




We LOVE Orange Julius. I remember when I was younger, we'd go to the mall, you know, with our jeans pegged and our aweosome hyper-color shirts and to be cool, you'd get a Orange Julius. Now, times have changes a bit. Number one, my hyper color shirts don't fit and two, we are on a budget! Luxuries such as the Julius, are just that, a luxury. I recently remembered that my mom had given me an Orange Julius recipe (she used to make them a lot when we were little) so I went on a hunt for it. Turns out, it was in my recipe book! Yay me! I wanted something orange because we were watching the Lorax and I thought it would be fun. I made these and the kids sucked them right down. So they are not so healthy.... it's not like I give it to them as juice daily. All I know is, they are yummy.


Here's what ya need!

  • 6 oz of frozen orange juice concentrate (thawed)
  • 1 cup of milk
  • 1 cup of water
  • 1/2 cup sugar
  • 1 tsp. vanilla extract
  • 10ish ice cubes (you'll figure out the consisteny you want it to be)
Throw it all in a blender and turn that sucker on. When finished, pour into a rad cup, slip on a hyper color shirt and LA Gear jeans and enjoy!


My rad cup just happens to be a Mickey Mouse cup with a polka dot straw.

Mason Jar Salads!

I love organizing. I love finding new ways to make life easier and more efficient for everyone! In addition to organizing, I am on a new mission to be a more of a serving wife. I know, I know, I know....what is she talking about? Not the Nicole I know. Well, peeps, I have been on some kind of transformation lately, but that's for another post:) This post is about Eric...and salad. Eric gets up at 3:30am everyday to go to work. He works an hour away, with no air conditioning in his truck. When it's 110* outside and raining, the man is a puddle when he gets home. To make his mornings a bit easier, I decided to make some salads ahead of time for him. He does not buy his lunch- we would go broke! After searching Pinterest, I found the mason jar salad and I knew it was the answer.

I went to Wal Mart and got a case of the wide mouth Kerr mason jars (I don't remember what size, but they are pretty big). Wide mouth is important if you want to eat right out of the jars. Then, you just get all the fixings you like for your salads.

I like to cut up all the veggies and chicken (or whatever you use) and put them in individual bowls, like an assembly line, plus then I feel like Rachael Ray:) The rule with mason jar salads is- don't let the dressing and the lettuce touch.




Here is the way I do it:

1. Dressing on the bottom

2. Carrot shreds

3. Chicken (if you are doing a chicken Caesar or something)

4. Veggies (we usually do zucchini, yellow squash, tomatoes, onions, cucumbers)

5. Lettuce (because I am lazy, I usually buy the big tub of organic lettuce from Costco)

Then simply put the lid on and put in the fridge. When it's time to eat, just shake up the jar and enjoy!

**Little tip**
Did you know that if you put lettuce in mason jars (just the plain stuff) if will last so much longer!

Spinach Artichoke Pasta







I love finding a new meal that everyone likes. This my friends, is tasty. If you like spinach artichoke dip (my entire mouth fills with saliva as I say it) then you will love this. 


Here are the necessary parts:



  • 1- 12 oz box of pasta- bow tie is my fav
  • 1 tsp. butter
  • 2 cloves of garlic, minced
  • 1 8 oz package of cream cheese
  • 1/2 cup milk
  • 1/2 cup sour cream
  • 1/2 lemon, juiced
  • 1/2 tsp. salt
  • 1/4 tsp red pepper flakes
  • 1- 14 oz can artichoke hearts (in water, not oil), drain em and chop em
  • 10 oz chopped, frozen spinach, thawed- make sure to get as much water out as possible
  • 1/2 cup Parmesan cheese, shredded
Directions:

  • Cook pasta as directed.
  • In a medium sauce pan on MEDIUM heat (trust me, medium) melt butter and garlic cook about 30 seconds
  • Add cream cheese, stir until melted
  • Slowly stir in milk, then add sour cream, lemon juice, salt and red pepper flakes
  • Stir in artichoke hearts, spinach, and Parmesan cheese
  • Drain pasta, add sauce to pasta and eat up!
We had some Caesar salad with this and it was perfect. The littles even liked it!

Oh and check this out....this is one of my "DUH why have I not thought of this before" moments.....

First, get an ice cube tray or two. Then fill it with lemonade....watch some Friends while they freeze. Take a mason jar (okay it doesn't really have to be a mason jar, a regular boring glass works just as well) fill it with the frozen lemonade ice cubes, then pour iced tea over the lemonade cubes. Bam! Instant Arnold Palmer. Yummy. 


I like to use my Cinch tea...it gives me an extra boost of energy without making me feel like I am on crack! Always a plus!

Jiffy Pop ain't so jiffy



We love popcorn in this house. I buy microwave popcorn all the time! I recently found out a new way to make popcorn that is cheaper and better for you! Did you know that microwave popcorn (in the bag) is actually dangerous? It is... Google it... your mind will be blown!


You will need popcorn KERNELS for this! Find a super cool baking dish (like a Pyrex or something along those lines), spray the bottom with Pam (or something equivalent) and cover the bottom with popcorn kernels.


Next step, cover it and put it in the microwave. Now, keep in mind that EVERY microwave is different. We have this itty bitty one and we don't need to popcorn in there longer than 3 min. 30 sec. Yes, there are still some kernels left in the bottom, but it's a heck of a lot better than smelling that nasty burnt popcorn smell...just sayin.






I put some spray butter and salt on there and we are good to go.....


Healthy, yummy, inexpensive popcorn.


Btw.... you can do this with a simple paper bag too. Just put 1/2 cup of kernels in the bag, fold the top over a couple times (so it doesn't pop all over the microwave) and put it in the microwave. Bam.... popcorn. I, however, don't keep paper bags around (trying to save money people), but I thought that was a cool alternative!

Easy, peasy, LEMON squeezy

Every one is in need of a super fast, easy dinner at some point in the their life, right? Yes, sometimes, it is awesome to put on a cute apron, set the perfect table, make the perfect 3 or 4 course meal, have the majority of dishes done before ever sitting down to enjoy such a miraculous event. Yes, lovely. Tonight, was not that night. I have on blue yoga pants, a green tank top, my hair has been pulled into a low, messy ponytail and as I sit here, I am trying to remember if I brushed my teeth. 


There is no excuse for this either. Seriously, I have not been unusually busy, the kids have actually been quite agreeable today (knock on wood) and my kitchen IS clean. So, I dunno....just a blah feeling kinda day. 


SO here is my EASY, Peasy, LEMON, squeezy recipe for LEMON chicken (in the crock pot). 


{NO apron required}


Ingredients:
*Butter
*Boneless, skinless chicken breasts (how ever many you need)
*Dry Italian Dressing seasoning packet
*Lemon juice


Here we go- pay close attention:


Place a slab of butter (I used a good amount, I love me some butter) in the bottom of the crock pot. Put the chicken on top. Sprinkle Italian Dressing packet on top of the chicken and squirt with lemon juice. Cook on low for 6-7 hours or high for 4 hours. 


Whew, wipe your brow, pour yourself a beer (or wine for you classy ladies) and rest assured knowing dinner is finished! We are having wild rice and green beans with ours tonight, but a side of noodles would be yummy too!

Eggplant Parmesan







Yesterday was Eric's birthday. We decided not to do anything big last night because he gets up super early for work (we're talking 3:30 am people). We will be gettin on dance on this weekend though! My mom had given me two eggplants from their garden and I had no idea what to make with them. Both Eric and my mom said that Eggplant Parmesan was super delicious- I had never even heard of it. Seriously, I am that person at an Italian restaurant (okay Olive Garden) that orders, soup,salad and bread sticks or spaghetti. No funny business- just straight up noodles and sauce. So no, Eggplant Parmesan was never an option. 


Eric decided that he wanted me to make that for his birthday dinner. I thought, no problemo! Then I started researching recipes and stuff and man, that dish had some major steps! I admit I was a little intimidated by it, and kept asking Eric if he was sure that he didn't want to go out to dinner... he kept saying no.


So I went ahead and did it. I followed this recipe and made some minor adjustments along the way. At exactly 6:00 we sat down to have some Eggplant Parmesan. And might I add....it was tasty:)


Here's the down low:

For the Eggplant:
2 medium eggplant (about 2 pounds) cut crosswise into 1/4-inch-thick rounds
1 tablespoon kosher salt
4 cups breadcrumbs
1 cup grated Parmesan (about 2 ounces)
Salt and freshly ground black pepper
1 cup all-purpose flour
4 large eggs
6 tablespoons vegetable oil

*I had 2 smaller ones.... and it was enough to fill a smaller 8 x 8 pan



For the Tomato Sauce:
2 cans (14 1/2 ounces each) diced tomatoes or pureed or crushed tomatoes
2 tablespoons extra-virgin olive oil
4 medium garlic cloves, minced (about 1 tablespoon)
1/4 teaspoon red pepper flakes
1/2 cup coarsely chopped fresh basil leaves
Salt and ground pepper

*I did not use the red pepper flakes and the sauce was still the bomb diggity*




For Baking:
8 ounces whole or part-skim mozzarella, shredded (2 cups)
1/2 cup grated Parmesan cheese (about 1 ounce)
10 fresh basil leaves, for garnish



Okay..lots of ingredients, but well worth it!


So now what?

To make the eggplant:
  1. In a large bowl, toss half of the eggplant slices and 1 1/2 teaspoons kosher salt; transfer salted eggplant to colander set over bowl. Repeat with remaining eggplant and salt. Let stand until eggplant releases about 2 tablespoons liquid, 30 to 45 minutes. Arrange eggplant slices on a triple layer of paper towels; cover with a triple layer of paper towels. Firmly press each slice to remove as much liquid as possible, then wipe off excess salt.
  2. While eggplant is draining, adjust oven racks to upper- and lower-thirds of the oven, place rimmed baking sheets on both racks, and heat oven to 425 degrees F.
  3. In a pie plate or shallow dish, combine breadcrumbs, Parmesan, salt and pepper. Set aside.
  4. Combine flour and 1 teaspoon pepper in large zipper-lock bag; shake to combine. Beat eggs in second pie plate. Place 8 to 10 eggplant slices in bag with flour, dip in eggs, let excess egg run off, then coat evenly with breadcrumb mixture. Set breaded slices on wire rack set over baking sheet. Repeat with remaining eggplant.
  5. Remove preheated baking sheets from oven; add 3 tablespoons oil to each sheet, tilting to coat evenly with oil. Place half of breaded eggplant on each sheet in single layer; bake until eggplant is well browned and crisp, about 30 minutes, switching and rotating baking sheets after 10 minutes, and flipping eggplant slices with wide spatula after 20 minutes. Do not turn off oven.
The way I did it was a bit different- you choose which you like better.

After I cut the eggplant, I placed them on a cookie cooling rack and poured salt on both sides of the rounds. I made sure to put a couple paper towels under it to catch all the water. If you don't  pull the moisture out, it will taste bitter. I waited like 30 minutes before I moved on

Then, I did not put them in the oven on cooling racks- mainly because I was confused by this step. So I just breaded them and placed them on the cookie sheets and put them in the oven.

To make the sauce:
  1. While eggplant bakes, process 2 cans diced tomatoes in food processor or blender until almost smooth (if using pureed or crushed tomatoes, skip this step).
  2. Heat olive oil, garlic and red pepper flakes in large heavy-bottomed saucepan over medium-high heat, stirring occasionally, until garlic is light golden, about 3 minutes; stir in processed and remaining can of tomatoes. Bring sauce to boil, then reduce heat to medium-low and simmer until slightly thickened and reduced, about 15 minutes. Stir in basil and season to taste.
{Like I said, I didn't use the red pepper flakes, cuz I forgot to buy them, but it was still yummy}

To assemble:
  1. Spread 1 cup tomato sauce in bottom of 13-by-9-inch baking dish. Layer in half of eggplant slices, overlapping slices to fit; distribute 1 cup sauce over eggplant; sprinkle with half of mozzarella. Layer in remaining eggplant and dot with 1 cup sauce, leaving majority of eggplant exposed so it will remain crisp. Sprinkle with 1/2 cup Parmesan and remaining mozzarella.
  2. Bake until bubbling and cheese is browned, 13 to 15 minutes. Cool 10 minutes, scatter basil over top, and serve, passing remaining tomato sauce separately.
{Again, our eggplants were little so we used an 8x8 pan instead and did 3 layers}

Okay, so there ya have it! We had some Caesar salad, French bread and some angel pasta to go along with it!

Menu planning Tuesday:)

Menu planning this week took a bit of a turn....like a U turn actually. We are embarking on a new adventure called War on Debt and we have decided that our food budget is outta control. One of the things that Dani Johnson reccomends is eating until your pantry, fridge, and freezer(s) are empty and then shop for one week at a time. No more stockpiling, no more buying cuz it's on sale. Nope. So, I rearranged my calendar a bit and came up dinners based on what we had in our pantry. I will only be going to the store tonight for produce, milk and juice. Nothing else. Oh and I should also share that Eric and I have decided to cut carbs out two days a week, so Tuesday ad Wednesday are carb free days:)


Monday: Crock pot chicken with dry onion soup, red potatoes, and onion with green beans.


Tuesday: (carb free day) Dr.Oz chicken, normandy veggies (from    COstco)


Wednesday: (carb free day) Grilled chicken & brocolli


Thursday: We have friends coming in town so we will be eating out!


Friday: Hamburgers, tater tots, green beans


The weekend is still up in the air.


Yes, we have all that and SO much more in our home right now. Instead of wasting it and buying different stuff, we are going to use it til it's all gone:)


Recipe for Dr. Oz Chicken:


I don't really know what it's called, but my mom got it out of her Dr. Oz cookbook, hence the name.


*Boneless, skinless chicken breasts (however many you need)
*Chopped tomato (don't really know how much, we like to cover the chicken breast with both)
*Chopped onion
*1 tbsp. olive oil
*1 tbsp. red wine vinegar
*fresh basil or we will be using Italian seasoning


Pre-heat the oven to 350 degrees. Make a tent out of tin foil, place individual breasts in each tent. Pour the olive oil and vinegar over the chicken breast, then pile on the tomato and onion. Sprinkle seasoning on top. Fold the foil into a tent and place in oven for 25 minutes (or until throughly cooked). Be careful when opening....super steamy people!!! It will hurt.

Menu Plan Monday- June 18th

Happy belated Father's Day to my awesome dad, my father's-in-law, my Granddaddy, my brothers-in-law and my super husband, Eric. Love you all!! This week is going to bring some major cleaning, goal setting, organizing and fun times with the kids. 
Here is our menu for the week:


Monday: Chicken roll-ups, brown rice, broccoli
Tuesday: Tater-tot casserole, salad,
Wednesday: Chicken Stroganoff, noodles, salad
Thursday: Chicken enchiladas, rice
Friday: French's chicken, red potatoes, green beans
Saturday: Hamburgers, corn, mashed potatoes




Chicken Roll-ups 
(This is from the Cooking with Grace cookbook)
*1 can of 8 refrigerated crescent rolls (we use two cans when the big kids are here)

*10 oz can of chunk white chicken or cook your own- 2-3 pieces, diced



*1 can cream of chicken soup (optional 2 cans for creamier taste- we do this)

*2 1/2 cups shredded cheddar cheese- divided use



*Salt and pepper to taste


1. Pre-heat oven to 350.
2. Spread out some foil and lay out the crescent rolls
3. In each roll put:
     A little chicken
     2 T. shredded cheese
     salt and pepper
4. Roll them up and put in deep dish
5. Whip cream of chicken soup with 1 can of water, or simply use 2 cans without water for a creamier taste. Since its thicker, you'll have to spread it with a spoon)
6. Pour soup around the rolls
7. Cook for 30 minutes
8. Sprinkle with 1/2 cup cheese and cook for 5 or 10 more minutes until cheese is melted.


Serve over a bed of rice:)






Tater Tot Casserole:
*1 can cream of mushroom soup 
*1 bag of tater tots
*shredded cheese
*1  pound of ground beef 
(I usually double this recipe when Daylen is here- otherwise it makes one of the smaller square baking dishes- when I double it, I fill a 9 x 13 pan)


1. Brown meat/drain (duh)
2. Add cream of mushroom and stir continuously
3. Let simmer on low for 15 min
4. Place mixture in bottom. Lay tater tots on top
5. Place in oven on 350- don't really know how long- keep checking on them, ready when golden brown- then write down how long it took and let me know please:)
6. Sprinkle with cheese and let melt in oven


Chicken Enchiladas: (from Cooking with Grace cookbook)


*1 medium onion, shopped
* 1 Tbsp. butter
*4 oz. can chopped green chilies
*3 1/2 cups cooked, diced chicken
*8 oz cream cheese
*1/2 cup sour cream
*10 (8 in) four tortillas
*16 oz shredded Monterrey Jack cheese
*2 cups heavy cream


1. Preheat oven to 350
2. Saute onion in the butter in large skillet for 5 minutes on medium
3. Add green chiles and saute for 1 minutes
4. Stir in chicken and cream cheese
5. Cook until the cream cheese melts, stirring constantly
6. Stir in sour cream
7. Spoon 2-3 tbsp. of chicken mixture into each tortilla
8. Arrange in lightly greases 9x13 pan
9. Top with the Monterrey jack cheese and drizzle with the cream
10. Bake for 30-45 minutes or until bubbly and light brown

Strawberry Bread





I had some requests for Strawberry Bread so here is the recipe:

* 3 cups all purpose flour
* 1 tsp. baking soda
* 1 tsp. salt
* 2 tsp. ground cinnamon
* 2 tsp. vanilla extract
* 2 cups sugar
* 2 1/2 cups sliced strawberries
* 4 eggs, beaten
* 1 cup cooking oil




Directions:
~ Mix it all up- BY HAND. 
~Add strawberries last
~Bake at 350 for 35-40 minutes in small loaf pans or around 60 minutes for 2 large loaf pans (that's what I use)


Mmmmmm.....goooood.
